04 Mar Rustic Sourdough Pizza with Figs, Truffle Honey, Gorgonzola and Parma Ham

The first time I tasted the combination of a strong blue cheese with truffle honey on a
warm bread was at a small Italian market at the height of summer. It sent me straight to
heaven and I loved every little morsel of the serving. When thinking about this pizza I was
lead straight back to that little Italian market and with figs and the glorious bounty that is
now available in this harvest season it just made complete sense. We use as sourdough
base but any good quality pizza base will do - ask your local favourite pizza joint to sell
you pre baked bases and freeze them - it makes life so much easier

Ingredients
- 4 Sourdough Pizza bases with a basic fresh tomato sauce thinly spread
- 2 balls of Fior de latte mozzarella shredded
- 250 g of good quality gorgonzola cheese roughly crumbled
- 8-10 fresh purple figs sliced
- Handful of toasted pine nuts
- 12 slices of good quality parma ham
- Truffle flavoured honey
- Willowcreek Olive Oil, fresh basil or rocket to garnish
Instructions
- Warm up you pizza stone, pizza oven or normal oven to at least 220 degrees Celsius
- Start by generously topping the pizza bases with mozzarella, gorgonzola and figs
- Bake until done for about 4 to 6 minutes depending on the speed and heat of your oven
- Remove when baked and start to top the pizzas with the pine nuts, parma ham the drizzle some truffle honey, olive oil over it and garnish with fresh herbs
- Enjoy!
