18 Feb Montagu dried cranberry, cucumber and exotic tomato picnic salad with Montagu macadamia and naartjie dressing
Ingredients
Salad
- 1 Medium sized cucumber, sliced into spaghetti
- 1 Packet exotic tomatoes, halved
- 2 Wheels feta cheese of your choice slightly crumbled
- 100 grams Montagu dried cranberries
Dressing
- 100 ml red wine vinegar
- 300 ml Extra Virgin olive oil
- Salt and pepper to taste
- 5 ml Dijon mustard
- 5 ml sugar
- Zest and juice of 1 nartjie
- 50 grams Montagu roasted and salted macadamia nuts
Instructions
Salad
- Take 4 medium sized jars and layer the salad inside starting with the cucumber, then the tomatoes followed by the feta and cranberries.
- Place the salads in the fridge until you are ready to leave for your picnic.
Dressing
- Place all the ingredients in a blender and blend until smooth.
- Pour the dressing in a glass bottle and place in the fridge until you are ready to leave on your picnic.
