Ingredients
Salad
  • 1 Medium sized cucumber, sliced into spaghetti
  • 1 Packet exotic tomatoes, halved
  • 2 Wheels feta cheese of your choice slightly crumbled
  • 100 grams Montagu dried cranberries
Dressing
  • 100 ml red wine vinegar
  • 300 ml Extra Virgin olive oil
  • Salt and pepper to taste
  • 5 ml Dijon mustard
  • 5 ml sugar
  • Zest and juice of 1 nartjie
  • 50 grams Montagu roasted and salted macadamia nuts
Instructions
Salad
  1. Take 4 medium sized jars and layer the salad inside starting with the cucumber, then the tomatoes followed by the feta and cranberries.
  2. Place the salads in the fridge until you are ready to leave for your picnic.
Dressing
  1. Place all the ingredients in a blender and blend until smooth.
  2. Pour the dressing in a glass bottle and place in the fridge until you are ready to leave on your picnic.
