Ingredients
  • 1 liter Meat stock, slowly reduced with marrow bones and mutton neck
  • 4 Tomatoes, chopped
  • 1 Onion, chopped
  • 1 Mace leaf
  • 2 Whole cloves
  • 10 ml sugar
  • Salt and pepper to taste
  • 35 grams cake flour
  • 150 ml milk
  • 25 grams Butter
  • 15 ml cream
  • Willow Creek Parmesan flavoured olive oil to finish
Instructions
  1. Place the stock, tomatoes, onion, mace, cloves, sugar and seasoning in a saucepan and cook until the vegetables are soft.
  2. Mix the flour with the milk and add to the soup. Stir and simmer for 5 minutes.
  3. Press through a sieve (you can use a stick blender)
  4. Heat again and add the butter and cream.
  5. Once you have filled your soup bowls, drizzle with a generous amount of the olive oil.
