Marinated and grilled chicken sosaties with satay sauce, cucumber spaghetti and Montagu sriracha flavoured peanuts

Ingredients
- 4 Deboned chicken breasts, cut into cubes
- 200 ml Good quality soy sauce
- 50 ml oil
- 80 ml honey
- 2 Garlic cloves minced
- 5 ml Freshly ground ginger
- 1 tin coconut cream
- 2 tablespoons smooth peanut butter
- 20 ml Soy sauce
- 10 ml red curry paste
- 1 Packet Montagu sriracha flavoured peanuts
- 1 cucumber cut into spaghetti strips
- Some extra sriracha flavoured peanuts for serving
Instructions
- Mix the soy sauce, oil, honey, garlic and ginger together and pour over the chicken cubes. Marinade for 1 hour or overnight.
- Skewer the chicken and cook on the braai or griddle pan uuntil cooked and charred.
- Place the coconut cream, peanut butter, soy sauce, curry paste and peanuts in a blender and blend until smooth.
- Place the cucumber spaghetti on a platter with the chicken sosaties in top.
- Drizzle the satay sauce over and add some more Montagu sriracha peanuts.
