29 Mar Lamb Meatballs with Three Sauces

A friend of mine has recently toured the USA and specifically New York where he visited “The Meatball Shop”, a restaurant exclusively serving meatballs with sauces and side dishes. I loved the idea and realized that this could easily be translated into our South African kitchens with some lovely meatballs from Karusaf which has been premixed and flavored for your convenience.
I just popped the meatballs into a hot oven of 180 degrees Celsius for 15 minutes and roasted some baguette for serving.

Ingredients
Mushroom and onion sauce
- 1 large onion chopped
- 1 tablespoon olive oil
- 250 g Mushrooms brown or button
- 250 ml cream
- salt and pepper
Salt paprika tomato sauce
- 1 large onion chopped
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 tin Tomatoes peeled
- 1 sachet tomato paste
- salt and pepper
Creamy basil pesto
- 50 g Butter
- 1 tablespoon Flour all-purpose
- 350 ml milk
- 2 tablespoon basil pesto or chopped fresh basil
- salt and pepper
Instructions
Mushroom and onion sauce
- In a saucepan, on high heat, brown the onion in the olive oil then add the mushrooms and sauté.
- Add the cream and cook on high heat until the cream is reduced and a thick sauce has formed.
- Season with salt and pepper and serve hot over the meatballs with some parmesan shavings.
Salt paprika tomato sauce
- In a saucepan, on high heat, brown the onion in the olive oil with the sugar.
- Add the tinned tomatoes and stir through until it starts boiling then add the tomato paste and paprika.
- Season with salt and pepper and serve hot over the meatballs.
Creamy basil pesto
- In a saucepan on medium heat melt the butter and stir in the flour.
- Add the milk slowly and stir into butter mixture with a whisk until all the milk is used and cook and continuously stir until the sauce thickens.
- Season with salt and pepper and stir in the basil pesto or fresh chopped herbs, serve hot over the meatballs.
