This is a wonderfully easy recipe for the most delicious honey ice cream that can be flavoured with various things. We prepare a simple version with honey and vanilla and add some delicious garnishes such as pears and fried banana bread.

This is a wonderfully easy recipe for the most delicious honey ice cream that can be flavoured with various things. We prepare a simple version with honey and vanilla and add some delicious garnishes such as pears and fried banana bread.

Ingredients
Ice Cream
- 500 ml fresh cream
- 3 eggs separated and the whites whipped
- 1 tin condensed milk
- 2 tablespoons Champagne Honey
- 1 teaspoon vanilla powder
Garnishes
- 1 tin baby pears halved
- 125 ml dessert wine such as KWV Mentors Noble Late Harvest
- 1/2 teaspoon cinnamon powder
- 4 slices banana bread
- 1 tablespoon Butter
- fresh gooseberries
- honey comb chopped
Instructions
Ice Cream
- Whip the cream until semi whipped and aerated.
- Blend the honey, condensed milk and eggs together.
- Fold the whipped egg whites into the cream.
- Slowly add the egg yolk mixture and fold in gently with the vanilla powder.
- Place in the freezer overnight to freeze.
Garnishes
- Place the pears in a heated sauce pan and cover with the dessert wine and dust with the cinnamon powder
- Reduce the liquid to one third for about 10-12 minutes.
- Let it cool.
- Cut the banana bread into smaller squares and pan fry in the butter until golden brown.
- Plate the dish with some chopped honey comb at the bottom of the plate and place the ice cream on top. Garnish with the banana bread and fresh gooseberries.
- Spoon the poached pears and sauce over the ice cream.
