It is surprising how easy it is to make ciabatta. The secret, in my opinion, is to mix it well and long enough for all the gluten strands to be able to develop in the bread and also don’t be scared at the amount of water that is required.

Ingredients
  • 1 kg white stone ground flour
  • 1 packet instant dry yeast
  • 1 tsp sugar
  • 125 ml B-well garlic flavoured oil
  • 1 cup pitted black olives
  • half handful rosemary
  • 1 tsp salt
  • 750 ml warm water
Instructions
Method
  1. Place all the ingredients accept the olives and water into a mixer with its K attachment.
  2. Mix through slowly. Add all the water and mix on high until the gluten in the dough starts to develop and starts pulling away from the sides.
  3. As soon as all the dough is clinging to the K attachment, mix for another 3 minutes.
  4. Turn down the speed to low and add the olives gently until incorporated.
  5. Place the dough in a well-oiled bowl and cover to rise to double its size.
  6. Turn out onto a floured surface and cut through into desired size. Bake for about 30-35 minutes until golden brown and makes a hollow sound when you knock on it.
Hint for Serving
  1. Create an antipasti platter with slices of the ciabatta with sliced charcuterie, olives, hummus, tzatziki and B-well flavoured garlic and chilli oil with some herbs chopped into it.
  2. For an extra naughty taste cover the dough before baking with more of the B-well garlic flavoured oil and sprinkle some coarse sea salt and more rosemary over.
  3. Bread is also delicious served with homemade butter.
  4. The bread freezes easily and can be warmed for 8-10 minutes in a hot oven before serving.
