Ingredients
  • 6 Firm Granny Smith Apples
  • 4 Kiwi Fruits peeled and sliced
  • 1 cup Green Grapes halved
  • 2 Limes sliced
  • 40 gram Capers or Caper Berries
  • Fennel Fronds
  • Fresh Flat Leaf Parsley
Dressing
  • 50 ml Willow Creek coriander flavoured olive oil
  • 1/2 cup lemon or lime juice
  • Salt and Cracked Black Pepper
Instructions
  1. Slice the apples in 5mm thick slices and use a cookie cutter to press out shapes like stars or hearts from the centre of each slice
  2. Save both the positive and negative shapes and douse well with lemon or lime juice after cutting.
  3. Arrance all the elements for the salat on a platter.
  4. Mix the dressing well and serve with the chilled salad.
  5. Tip: Add a fresh chopped chilli to the dressing for an extra level of flavour.
