Ingredients
Pudding
  • 250 g dates, chopped
  • 1 cup Boiling water
  • 5 ml Bicarbonate of soda
  • 115 g Butter
  • 200 g brown sugar
  • 2 eggs
  • 240 g SASKO cake flour
  • 5 ml baking powder
  • 5 ml salt
  • 100 g almonds, crushed
Sauce
  • 100 ml Willow Creek blood orange flavoured olive oil
  • 500 ml Full cream milk
  • 250 ml water
  • 1 cup brown sugar
  • 5 ml salt
  • 15 ml Vanilla essence
Instructions
Pudding
  1. Oven Temperature: 160 degrees Celsius
  2. Pour the boiling water over the dates and leave to soak for 10 minutes.
  3. Cream the butter and sugar together until light and fluffy and whip in the eggs.
  4. Mix the bicarb into the dates and add to the egg mix.
  5. Mix through and add the dry ingredients.
  6. Mix the batter well and pour into a prepared oven dish.
  7. Scatter over the almonds and bake until golden brown and cooked.
Sauce
  1. Place all the ingredients in a saucepan and bring to a boil.
  2. Pour over the pudding when it comes out of the oven.
