Ingredients
Snoek
  • 1 Whole Fresh snoek, approx. 1kg
  • 250 grams Butter melted
  • 15 ml muscavado sugar
  • 2 medium sized onions cut into rings
  • 10 ml Good quality coffee powder dissolved in a little bit of boiling water
  • 2 Garlic cloves grated
  • 5 ml cumin seeds crushed
  • 5 ml Coriander seeds toasted and crushed
Sweet Potato Mash
  • 800 grams orange sweet potato peeled and diced
  • 100 grams Butter cut into cubes
  • Zest and juice of medium sized oranges
  • 50 ml Wild Africa cream
Instructions
Snoek
  1. Preheat your oven to 180 degrees Celsius on a fan setting.
  2. Mix together the melted butter and sugar until the sugar has dissolved.
  3. Add the coffee, garlic, cumin and coriander and season to taste.
  4. Place the onion rings on a piece of heavy duty foil that is large enough for it to close when you add the fish on top.
  5. Place your snoek on top of the onions.
  6. Brush over the butter sauce and close up the foil.
  7. Bake in the oven for approx. 20 minutes or until cooked.
Sweet Potato Mash
  1. Place your sweet potato in a sauce pan and cover with cold water.
  2. Bring to the boil on a high heat and cook until soft and starting to fall apart.
  3. Add the butter, orange zest and juice, Wild Africa cream and salt and mash until thick and smooth.
  4. If the mash is too thick, add some full cream milk or cream.
  5. Serve the mash with the oven baked snoek and some of the pan juices.
