Ingredients
- 1 tbsp olive oil
- 2 medium onions chopped
- 2 cloves garlic grated
- 1 cup The Mentors Semillon
- 1 head cauliflower chopped
- 500 ml chicken stock prepared
- 250 ml cream
- white pepper to taste
- white truffle oil or good quality olive oil
Instructions
- In a heated saucepan, sauté the onions in the olive oil until golden.
- Add the garlic and give it a good stir.
- Add the wine and reduce the liquid by half.
- Add the cauliflower and the chicken stock. Cover with a lid and cook on high heat until the cauliflower is soft.
- Blend in batches until very smooth. Return to the saucepan, add the cream and heat the soup right through.
- Season with white pepper and serve in bowls with droplets of white truffle or olive oil.
