Cauliflower Cream Soup with White Truffle Oil
Cauliflower soup made with onions, garlic, butter, cauliflower and reduced with cream served with drops of white truffle oil

Ingredients
  • 1tbsp olive oil
  • 2 medium onionschopped
  • 2cloves garlicgrated
  • 1cup The Mentors Semillon
  • 1head cauliflowerchopped
  • 500ml chicken stockprepared
  • 250ml cream
  • white pepperto taste
  • white truffle oilor good quality olive oil
Instructions
  1. In a heated saucepan, sauté the onions in the olive oil until golden.
  2. Add the garlic and give it a good stir.
  3. Add the wine and reduce the liquid by half.
  4. Add the cauliflower and the chicken stock. Cover with a lid and cook on high heat until the cauliflower is soft.
  5. Blend in batches until very smooth. Return to the saucepan, add the cream and heat the soup right through.
  6. Season with white pepper and serve in bowls with droplets of white truffle or olive oil.
